Settled on the Anglo – Scottish border, Pentonbridge Inn offers a seasonal menu with its heart in local produce. We utilize the best products from around the United Kingdom as well as from our very own gardens at Netherby hall. It therefore inevitably includes meat from Cumbria and the finest fish and shellfish from Scotland. We are currently open 4 days a week for dinner from Wednesday to Saturday and breakfast for our residents from Thursday to Sunday.
We are currently recruiting for a Sous Chef to join our 1 Michelin star, 3AA Rosette Restaurant. We operate a 4-day working week from Wednesday to Saturday understanding the need for a good work/life balance. We also offer paid overtime and a comprehensive private healthcare scheme for all our employees.
We are looking for a strong Sous Chef to work closely with our Head chef to oversee the running of the kitchen and our team of 5, ensuring our high standards are consistently met and the menu evolves and develops throughout the year in line with the seasons and produce from our walled garden.
KEY RESPONSIBILITIES INCLUDE:
- Overseeing the day to day running of the kitchen alongside the Head Chef
- Assisting the Head Chef in menu development and implementation of new dishes, bringing fresh ideas and methods to the table
- Manage the relationship with the garden team to ensure ingredients are utilised and used efficiently throughout the seasons
- Mentor and develop junior team members to ensure the company ethos is instilled within the team and continually drive excellence
- Assume responsibilities of the Head Chef in their absence
EXPERIENCE:
- Previous Sous Chef experience working within a Michelin starred/3 AA Rosette establishment
- Passion for working with quality seasonal ingredients
- Understanding of growing methods and seasonality
- Previous experience managing the day-to-day running of a fine dining kitchen
- Ability to work across all sections in the kitchen
